Grandma's Collection of Recipes

Many of these recipes are long-time family favorites and bring back memories and smiles of Grandma's delicious meals.  Additional recipes are included that she has collected from her family and friends, and are noted as such.  If you have a recipe, a memory, or a thought to share, please let us know, we would love to add it to her recipes for everyone to enjoy.  These recipes are organized the way she had them in her boxes.

Scalloped Potatoes

Scalloped Potatoes

Yield: 10-12 Servings
Prep Time: 40 minutes
Cook Time: 45 minutes
Total Time: 1 hour 25 minutes

Ingredients

  • 6-8 medium-sized potatoes, unpeeled
  • 1 bunch green onions, chopped
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 pint sour cream
  • 1 cube butter, melted
  • 1 cup sharp cheddar cheese, grated

Instructions

Step 1: Fill a large pan with water, add 1/4 teaspoon salt and bring to boil. Add potatoes and boil until tender when inserting a fork. Remove potatoes and let cool. Slice or cube potatoes and place in a 9x13 baking dish

Step 2: Sprinkle potatoes with green onions

Step 3: Mix together mushroom soup, chicken soup, sour cream and butter. Pour over potatoes and onions.

Step 4: Top with grated cheese.

Step 5: Bake 45 minutes at 350 degrees. Let cool 10 minutes before serving.

Notes

When going to Grandma's for just about any holiday, especially Thanksgiving and Easter, this was a dish that got passed around the table only one time. If you were the last to get the dish, you were lucky if there was more than a spoonful left to eat.
