This is a great chicken recipe that is perfect for the grill. Sweet, tangy, salty and a bit sour, this is a delicious dish for the whole family. Spice it up with a sprinkle of red pepper flakes!

Ingredients

  • 4 chicken breasts, left whole or chunked into cubes
  • 2 Tbls oil
  • 1 large green pepper, sliced into strips
  • 1 garlic clove, minced
  • 3 green onions, sliced (optional)*
  • 2 cans cream of chicken soup
  • 2 Tbls soy sauce
  • 13 oz can of pineapple tidbits or rings
  • 4 cups cooked rice
  • 1/2 cup slivered almonds.

Instructions

Step 1: In a large sautee pan over medium-high heat, add oil.

Step 2: Sautee green pepper and green onions in hot oil until just starting to soften but still firm. Add in garlic and cook another minute.

Step 3: Add cubed chicken and cook through. For grilling, see notes below.

Step 4: Mix in cream of chicken soup, soy sauce, and juice from canned pineapple and bring to heat.

Step 5: Once heated, mix in the pineapple tidbits and serve over rice. Sprinkle with toasted slivered almonds

Notes

TO GRILL:
Combine the soy sauce and pineapple juice and use to baste chicken breasts and pineapple slices before placing on grill. Add remainder soy sauce and pineapple juice to mushroom soup and heat in pan. Serve as a gravy over the grilled chicken.


* We took the liberty of adding green onions and we think they really help to elevate the recipe.
