A delicious moist spice cake perfect for using up harvest apples.

Ingredients

  • 1 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups flour, sifted
  • 3 eggs
  • 1/2 cup oil
  • 1/2 cup water
  • 1 tsp vanilla
  • 2 cups apples, cut up with skins on
  • 1 cup nuts, chopped
  • 8 oz. cream cheese
  • 1/2 cup butter
  • 1 teaspoon vanilla
  • 4 cups powdered sugar
  • 4 tsp lemon juice

Instructions

Step 1:  Mix together the sugar, cinnamon, salt, baking soda, and flour.

Step 2:  In a separate bowl, beat together the egg, oil, water, and vanilla.  Stir into flour.

Step 3:  Mix in apples and nuts.

Step 4:  Pour into 9x13 baking dish, or two 8-inch cake pans and bake at 350 degrees for 30 - 40 minutes until done.

Step 5:  Let the cake cool and mix together the cream cheese, butter, vanilla, sugar and lemon juice until smooth and creamy.  Frost cake when cooled completely.
