A delicious moist spice cake perfect for using up harvest apples. Step 1: Mix together the sugar, cinnamon, salt, baking soda, and flour. Step 2: In a separate bowl, beat together the egg, oil, water, and vanilla. Stir into flour. Step 3: Mix in apples and nuts. Step 4: Pour into 9x13 baking dish, or two 8-inch cake pans and bake at 350 degrees for 30 - 40 minutes until done. Step 5: Let the cake cool and mix together the cream cheese, butter, vanilla, sugar and lemon juice until smooth and creamy. Frost cake when cooled completely.
